When designing the kitchen renovation, our primary focus was to assure that all aspects of the new kitchen were compliant with the existing building and health codes. To that end, the walk-in cooler, main kitchen, and dish area were completely demolished and rebuilt with all new materials. This included new ceilings, walls, flooring, exhaust hood system, dish machine, and an expanded floor drain system. From an equipment perspective, we replaced or added the following items to the main kitchen: high-efficiency stove, griddle, grill, broiler, brick pizza oven, coolers, prep decks, and fryers. For the prep kitchen, we replaced or added: double combitherm oven, tilt skillet, stove, prep tables, protein prep station, bread slicing station. In addition, the dry storage area was completely painted, and the floors were waterproofed.
